JUST Egg Makes Its Innovative Mark

Listed among The 10 Smartest Sustainable Products of 2018, TIME recognized Just Egg from an environmentally-friendly angle:
The animal agriculture industry is responsible for around 15% of the world’s greenhouse gas emissions, according to a U.N. estimate, thanks to the immense resources required to raise and feed animals. The JUST Egg cuts down on those emissions with a vegan egg replacement product made from a plant called mung bean. Cooked right, it tastes pretty close to the real thing. —Justin Worland/TIME
Popular Science’s 2018 Best of What’s New included Just Egg in its Engineering category, with a focus on the product’s mung bean base ingredient:
Just Egg—a pour-and-cook, plant-based substitute—looks and tastes a lot like the real thing and has a 39-percent-smaller carbon footprint.
